Ingredients:
1/2 cup artichoke hearts
1/4 cup diced tomato
1/4 cup cooked quinoa
1 ounce firm dice tofu
salt to taste
Directions:
Mix all the ingredients and heat in the microwave for 1 minute or until heated through.
**For a complete meal, serve with 1 1/4 cup vegetable (mushrooms, corn) and 1 ounce of protein (pan seared seitan).
