Potato Dumplings

Ingredients:
1/2 cup grated and drained potato
1/4 flour
1 egg
Salt to taste

Directions:
Mix ingredients.  Drop by spoonfuls into boiling, salted water (watch they don't stick).  Cook until they are no longer doughy.

**1 1/2 cup vegetable (corn, green beans, salad), 1 ounce protein (seitan, tofu).
