Ingredients:
1 serving of tofu ricotta
1/2 cup sliced zucchini
1/2 cup sliced artichoke hearts
1/2 cup sliced tomato
salt to taste
Directions:
Layer the ingredients in a lightly greased baking dish. Back at 350 for 20-25 minutes.
**For a complete meal, serve with 1 serving of grain (garlic bread, toast).
