Arugula Salad with Black Olives, Corn, Tomatoes

Ingredients:
1 cup arugula
optional number of black olives, sliced
1/2 cup cooked corn kernels
1/2 cup diced tomato
1/4 cup cooked black beans
salt to taste

Directions:
Mix and serve.

**For a complete meal, serve with 1 ounce protein (tofu bacon) and 1 serving of grain (roll, cornbread).
