Ingredients:
1/4 cup artichoke hearts, chopped
1/4 cup diced tomato
1/4 cup diced cucumber
2-3 sliced Kalamata olives (optional)
1 ounce diced firm tofu
1/2 tsp parsley
1/4 tsp lemon juice
salt and pepper to taste
1 Pita
Yogurt sauce:
2 Tbsp yogurt
1 Tbsp fresh dill or 2 tsp dried
Directions:
Combine the vegetables and the spices. Make the yogurt sauce. Spoon the vegetable mix into the pita and top with the yogurt sauce.
**For a complete meal, serve with 1 1/4 cup vegetables (romaine salad), and 1 ounce of protein (black beans).
