Tofu Ricotta

Ingredients:
2 ounces of firm tofu
1/2 tsp lemon juice
1/2 tsp basil (optional)
1 1/2 tsp nutritional yeast
bit of olive oil
salt and pepper to taste

Directions:
Crush the tofu with a fork to desired consistency and add the other ingredients.  For smooth Ricotta, whir in a food processor.
